Ingredients
- 2 1/2 cups all-purpose flour
- 2 cups sugar
- 1 1/2 tsp. ground cinnamon
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1 tsp. salt
- 1 1/2 cups oil
- 4 slightly beaten eggs
- 3 (4 oz.) jars strained carrots (baby food)
- 1 cup chopped nuts
- 1/2 cup butter, softened
- 1 (3 oz.) pkg. cream cheese, softened
- 1 tsp. vanilla
- 3 cups sifted powdered sugar
Directions

Grease 15 × 10 × 1-inch baking pan; set aside.

Combine flour, sugar, cinnamon, baking powder, baking soda, and salt. Add oil, eggs and carrots. Beat with an electric mixer until combined. Stir in nuts.

Pour into prepared pan. Bake in 350 degree oven about 30 minutes. Cool in pan on wire rack.

Meanwhile, for frosting, beat butter, cream cheese and vanilla until light and fluffy. Gradually add 2 cups powdered sugar, beating well. Beat in remaining powdered sugar. Frost bars. Store covered in refrigerator.
