Basmati Rice with Cashews and Mandarin Oranges

Ingredients
- 2 tsp. olive oil
- 1/2 medium onion, chopped
- 1/2 tsp. turmeric
- 1 cup basmati brown rice
- 1 cup water, vegetable stock or chicken stock
- 1/2 cup orange juice
- 1/2 cup mandarin orange sections, drained
- 1/4 cup roasted cashews, chopped
Directions

Heat oil in 1 1/2-quart saucepot with tight-fitting lid. Add onion and turmeric, cook and stir 2 minutes or until onion is softened.

Stir in rice. Add water and juice. Bring to boiling; immediately cover and lower heat.

Simmer 20 minutes until rice is tender and all liquid is absorbed. Cool slightly; add orange sections and cashews before serving.
