Basmati Rice with Cashews and Mandarin Oranges

Ingredients

  • 2 tsp. olive oil
  • 1/2 medium onion, chopped
  • 1/2 tsp. turmeric
  • 1 cup basmati brown rice
  • 1 cup water, vegetable stock or chicken stock
  • 1/2 cup orange juice
  • 1/2 cup mandarin orange sections, drained
  • 1/4 cup roasted cashews, chopped

Directions

  1. Heat oil in 1 1/2-quart saucepot with tight-fitting lid. Add onion and turmeric, cook and stir 2 minutes or until onion is softened.

  2. Stir in rice. Add water and juice. Bring to boiling; immediately cover and lower heat.

  3. Simmer 20 minutes until rice is tender and all liquid is absorbed. Cool slightly; add orange sections and cashews before serving.
