Basmati Rice with mustard Seeds and Golden Raisins

Ingredients
- 2 2/3 cups water
- 1 1/8 cups Texmati rice (American basmati) or brown basmati rice
- 1/4 cup golden raisins
- 1 cinnamon stick
- 1 tsp. mustard seeds
- 3/4 tsp. salt
- 1/2 cup thinly sliced scallion greens
Directions

In a 3-quart heavy saucepan stir together all ingredients except scallion and bring to a boil.

Reduce heat to low and cook, covered, until rice is tender and liquid is absorbed, about 20 minutes. Fluff rice with a fork and stir in scallion.
