Italian BLT

Ingredients

  • 4 thin slices pancetta
  • 2 tbsp. mayo
  • 1 tbsp. chopped basil
  • 2 slices country bread
  • Baby arugula
  • Sliced tomato

Directions

  1. Cook pancetta in a skillet over medium-high heat until crisp, 5 minutes. Mix mayo with basil; spread on slices of bread. Sandwich the pancetta, arugula and tomato between the bread slices.
