Ingredients
- 4 thin slices pancetta
- 2 tbsp. mayo
- 1 tbsp. chopped basil
- 2 slices country bread
- Baby arugula
- Sliced tomato

Cook pancetta in a skillet over medium-high heat until crisp, 5 minutes. Mix mayo with basil; spread on slices of bread. Sandwich the pancetta, arugula and tomato between the bread slices.
