Balsamic Mushroom Pilaf

Ingredients
- 1 pkg. (.35 oz.) dried porcini mushrooms
- 2/3 cup boiling water
- 1 Tbswp. olive oil
- 2 Tbsp. butter
- 1 large skallot, finely chopped
- 1 large clove garlic, minced
- 4 to 6 fresh mushrooms, sliced
- 1 cup basmati rice
- 1/2 tsp. salt
- Freshly ground pepper to taste
- 1/2 tsp. dried thyme
- 2 Tbsp. flat leaf parsley, chopped
- 1/2 cup dry white wine
- Approximately 1 cup of stock

Chop the porcini and cover with the boiling water. Steep for 20 to 30 minutes.

Heat the olive oil in a heavy pot. Add the butter and melt. Cook the shallot, garlic, and sliced fresh mushrooms over low heat for approximately 3 minutes.

Add the rice and cook for another 2 minutes. Add the sdaltr, pepper, thyme, parsley, and wine. Stir and then add the porcini mushrooms, soaking liquid, and stock. Bring to a oil over medium heat. Cover, reduce heat, and simmer for 20 minutes.
