Batter-Fried Chicken

Ingredients

  • 1 2 ro 2 1/2 lb. broiler-fryer chicken, cut up
  • 1 cup pancake mix
  • 3/4 tsp. salt
  • 3/4 cup water
  • Cooking oil

Directions

  1. In a covered saucepan simmer chicken in salted water to cover for 20 minutes; drain.

  2. In a bowl, combine pancake mix and salt; stir in water. Beat 2 minutes. Dip chicken in batter, let excess batter drain off into bowl.

  3. In heavy skillet that’s at least 3 inches deep, heat 1 1/4 inches oil to 350 degrees. Regulate heat so chicken fries at 1bout 325 degrees. Fry a few pieces at a time about 5 minutes or until golden and chicken is tender. Drain well.
