Batter Corn Popsicles

Ingredients
- All-purpose flour
- 1/2 tsp. each baking powder, sugar and salt
- Dash of pepper
- 1/2 cup milk
- 1 egg, separated
- 1 tsp. vegetable oil
- About 12 ears fresh corn
- Fat for deep-frying
Directions

mix 1/2 cup flour, the baking powder, sugar,, salt and pepper. Stir milk, egg yolk, and oil together.

Add to flour mixture and mix well. Let stand at room temperature 20 minutes.

Meanwhile, husk corn and cut ears in half.

Beat egg whites until stiff. Fold in batter. Dust corm with flour and shake off excess. Dip corn in batter and fry in deep fat heated to 350 degrees on frying thermometer 3 to 5 minutes, or until well browned. Serve on sticks.
