Batty Cakes (cornbread cakes)

Serves 4 people

Ingredients

  • 1 cup corn meal
  • 1/2 tsp. soda
  • 1/2 tsp. salt
  • 1 beaten egg
  • 1 1/4 cups buttermilk

Directions

  1. Sift together dry ingredients. Add beaten egg and buttermilk to dry ingredients, beating until smooth.

  2. Pour one tablespoon of batter for each cake onto a well-greased iron skillet.

  3. Bake until brown, turning once. (If batter gets too thick, add a little more buttermilk.) Serve with honey or maple syrup.
