Vietnamese-style cabbage salad

Ingredients

  • 2 chicken breasts
  • 1 medium head savoy cabbage
  • 1 c julienned carrots
  • 4-5 scallions, thinly sliced longways
  • 1/4 c mint leaves, roughly chopped
  • 1/4 c basil leaves, roughly chopped
  • 1/4 c cilantro leaves, roughly chopped
  • 1/4 c water
  • 3 T fresh lime juice
  • 2 T fish sauce
  • 1/2 t apple cider vinegar
  • 1 T olive oil
  • red chili flakes

Directions

  1. Cook the chicken.

  2. Thinly slice or shred the cabbage, carrots, and spring onion tops into long strips, then roughly chop the herbs and place all the above ingredients into a large bowl.

  3. In a separate bowl or mason jar, measure out all the dressing ingredients. Shake or mix well.

  4. Pour the dressing over the salad, toss and serve.
