- 1 large cauliflower
- Blue cheese dressing
- Chopped chives
- Cooked, crumbled bacon

Trim leaves and stem from cauliflower; quarter through the center. Place on baking sheet. Drizzle with olive oil; season. Roast at 425 until golden, about 30 minutes. Divide among plates; season. Top with blue cheese dressing, chives and bacon.
