Roasted Squash with Green Tahini

Ingredients

  • 2 medium acorn squash, halved, seeded and sliced 1 inch thick
  • 1 tbsp. olive oil
  • 1/2 tsp ground cumin
  • 1/4 tsp salt
  • Green Tahini:
  • 1/2 cup packed fresh cilantro
  • 1/2 cup packed fresh parsley
  • 1/2 cup tahini
  • 1/2 cup water
  • 1/4 cup olive oil
  • 2 tsp lemon zest
  • 1/4 cup lemon juice
  • 2 garlic cloves
  • 1/2 tsp salt

Directions

  1. Preheat oven to 400. Line a large baking sheet with parchment paper.

  2. Toss squash with 1 tbsp. oil, cumin and 1/4 tsp salt in a large bowl. Transfer to the prepared baking sheet. Roast until tender, 30-35 minutes.

  3. To prepare tahini: Combine cilantro, parsley, tahini, water, oil, lemon zest, lemon juice, garlic and salt in a blender. Blend until smooth.

  4. Serve the squash drizzle with 2/3 cup of the green tahini.
