Ingredients
- 2 medium acorn squash, halved, seeded and sliced 1 inch thick
- 1 tbsp. olive oil
- 1/2 tsp ground cumin
- 1/4 tsp salt
- Green Tahini:
- 1/2 cup packed fresh cilantro
- 1/2 cup packed fresh parsley
- 1/2 cup tahini
- 1/2 cup water
- 1/4 cup olive oil
- 2 tsp lemon zest
- 1/4 cup lemon juice
- 2 garlic cloves
- 1/2 tsp salt

Preheat oven to 400. Line a large baking sheet with parchment paper.

Toss squash with 1 tbsp. oil, cumin and 1/4 tsp salt in a large bowl. Transfer to the prepared baking sheet. Roast until tender, 30-35 minutes.

To prepare tahini: Combine cilantro, parsley, tahini, water, oil, lemon zest, lemon juice, garlic and salt in a blender. Blend until smooth.

Serve the squash drizzle with 2/3 cup of the green tahini.
