BBQ Blackeyed Pea Spread

Ingredients
- 1/4 cup packed parsley
- 2 cloves garlic
- 1 Tbsp. non-fat sour cream
- 4 Tbsp. favorite barbecue sauce
- Salt and pepper to taste
- 1 pkg. Melissa's Black-eyed peas, cooked/ drained
- 2 Tbsp. green onion, thinly sliced
- 1/4 cup celery, thinly sliced
- 1/4 cup bell pepper, thinly sliced
- 1/4 cup shredded carrot
Directions

In the work bowl of a food processor fitted with the metal chopping blade, process first 2 ingredients until finely chopped.

Add and process the next 3 ingredients until completely mixed.

Add black-eyed peas and remaining ingredients, pulsing to combine so that the vegetables and peas are lightly mixed. Do not over process.

Use as a sandwich spread or appetizer dip.
