BBQ Blackeyed Pea Spread

Ingredients

  • 1/4 cup packed parsley
  • 2 cloves garlic
  • 1 Tbsp. non-fat sour cream
  • 4 Tbsp. favorite barbecue sauce
  • Salt and pepper to taste
  • 1 pkg. Melissa's Black-eyed peas, cooked/ drained
  • 2 Tbsp. green onion, thinly sliced
  • 1/4 cup celery, thinly sliced
  • 1/4 cup bell pepper, thinly sliced
  • 1/4 cup shredded carrot

Directions

  1. In the work bowl of a food processor fitted with the metal chopping blade, process first 2 ingredients until finely chopped.

  2. Add and process the next 3 ingredients until completely mixed.

  3. Add black-eyed peas and remaining ingredients, pulsing to combine so that the vegetables and peas are lightly mixed. Do not over process.

  4. Use as a sandwich spread or appetizer dip.

  5. makes 1 cup
