Chicken-Broccoli Salad with Buttermilk Dressing

Ingredients

  • 3 cups broccoli coleslaw mix
  • 2 cups coarsely chopped cooked chicken breast
  • 1/2 cup dried cherries
  • ⅓ cup thinly sliced celery
  • 1/4 cup finely chopped red onion
  • ⅓ cup buttermilk
  • ⅓ cup light mayonnaise
  • 1 tablespoon honey
  • 1 tablespoon cider vinegar
  • 1 teaspoon dry mustard
  • 1/2 teaspoon salt
  • ⅛ teaspoon black pepper
  • 4 cups fresh baby spinach

Directions

  1. In a large bowl combine the broccoli slaw mix, chicken, dried cherries, celery, and red onion. In a small bowl whisk together buttermilk, mayonnaise, honey, vinegar, dry mustard, salt and pepper. Pour buttermilk mixture over broccoli mixture; toss gently to combine. Cover and chill at least 2 hours or up to 24 hours before serving. Just before serving, add baby spinach and toss gently to combine.
