Ingredients
- 3 cups broccoli coleslaw mix
- 2 cups coarsely chopped cooked chicken breast
- 1/2 cup dried cherries
- ⅓ cup thinly sliced celery
- 1/4 cup finely chopped red onion
- ⅓ cup buttermilk
- ⅓ cup light mayonnaise
- 1 tablespoon honey
- 1 tablespoon cider vinegar
- 1 teaspoon dry mustard
- 1/2 teaspoon salt
- ⅛ teaspoon black pepper
- 4 cups fresh baby spinach
Directions

In a large bowl combine the broccoli slaw mix, chicken, dried cherries, celery, and red onion. In a small bowl whisk together buttermilk, mayonnaise, honey, vinegar, dry mustard, salt and pepper. Pour buttermilk mixture over broccoli mixture; toss gently to combine. Cover and chill at least 2 hours or up to 24 hours before serving. Just before serving, add baby spinach and toss gently to combine.
