Home Style Pork Chops with Pan Sauce

Ingredients

  • Pork Chops
  • 1/2 cup TJ’s Unbleached All Purpose Flour
  • 1 Tablespoon TJ’s Smoked Paprika
  • 1/2 teaspoon TJ’s Sea Salt, plus more for chops
  • 1/2 teaspoon TJ’s Ground Black Pepper, plus more for chops
  • 1/4 cup TJ’s Imported Olive Oil
  • 3 to 5 (4-ounce) Boneless Center Cut Pork Loin Cutlets, pounded flat
  • Pan Sauce
  • 1 1/3 cup TJ’s Low Sodium Chicken Broth
  • 1 tablespoon fresh TJ’s herbs (rosemary, thyme or sage), chopped fine
  • 1 pat TJ’s Unsalted Butter

Directions

  1. Place flour in a shallow dish; add measured salt and pepper and smoked paprika; combine well. Rub pork chops evenly on both sides with 1 tablespoon olive oil and season to taste with salt and pepper. Dredge chops in flour mixture. Shake off excess flour. Heat remaining oil in a heavy skillet; add chops and fry over medium heat about 3 minutes on each side or until golden brown. Remove chops to a serving dish. To make a quick pan sauce: Pour off excess oil from skillet and add low sodium chicken broth, deglaze pan with a wooden spoon and reduce broth by half; about 3 minutes. Remove pan from heat; add herbs and butter. Swirl until glossy and smooth; pour over chops and serve right away. At table add salt and pepper to taste if desired.
