Mrs. A.’s Low Fat Pineapple Walnut Cake

Ingredients

  • 2 cups flour
  • 2 cups sugar
  • 2 eggs
  • 2 tsp. baking soda
  • 1 large can crushed pineapple, juice and all
  • 1 tsp. vanilla
  • 1 cup chopped walnuts

Directions

  1. Set aside low fat cream cheese, powdered sugar, 1 tsp. vanilla extract and low-fat milk. Spray 13×9-inch baking pan with baking spray.

  2. Mix all other ingredients with a wooden spoon.

  3. Pour into baking pan and bake at 350 degrees for 45 min. or until done.

  4. Let cool and frost with low-fat cream cheese icing or sprinkle with powdered sugar.
