Spinach-Walnut Pesto

Ingredients

  • 4 cups fresh spinach
  • 1/4 cup toasted walnuts
  • 1 oz. grated Parmesan
  • 1 small garlic clove, chopped
  • 2 tsp fresh lemon juice
  • 1/4 tsp crushed red pepper
  • 3 tbsp. olive oil
  • 2 tbsp. warm water

Directions

  1. Place spinach, walnuts, Parmesan, garlic, lemon juice, and red pepper in a food processor; process until finely chopped. With processor on, slowly add olive oil through food chute. Add water; process until blended.
