Ingredients
- 3 (8-oz) baking potatoes, cut lengthwise into 8 wedges
- 1 tbsp. minced fresh oregano
- 1 1/2 tbsp. olive oil
- 1 tsp grated lemon rind
- 1/2 tsp kosher salt
- 1/2 tsp black pepper
- 1 tsp minced fresh oregano
- 1 tsp lemon juice
- 1 oz. crumbled feta
Directions

Preheat oven to 450 with a baking sheet in the oven. Combine potatoes, oregano, olive oil, lemon rind, salt and pepper in a bowl. Coat preheated pan with cooking spray. Add potato mixture to pan; bake at 450 for 30 minutes, stirring after 15 minutes. Sprinkle with oregano, lemon juice and feta.
