Coconut Macaroons

Ingredients

  • 2/3 cup condensed milk
  • 1 large egg white
  • 1 1/2 tsp. of vanilla
  • 1/8 tsp. salt
  • 3 1/2 cups flaked or shredded sweetened coconut

Directions

  1. Position rack in the upper third of the oven. Preheat oven to 325 degrees. Cover cookie sheets with parchment paper or well-greased aluminum foil.

  2. Stir together until well combined the condensed milk, egg white, vanilla, and salt.

  3. Stir in the coconut until well blended.

  4. Drop the dough by scant tablespoons about 2 inches apart. Bake until nicely browned, 20-25 minutes.
