Ingredients
- 1 cup yellow cornmeal
- 1 cup all-purpose flour
- 1 tsp salt
- 1 tbsp. baking powder
- 1 cup buttermilk
- 1/2 cup whole milk
- 1 large egg
- 1/2 tsp baking soda
- 1/4 cup plus 2 tbsp. vegetable shortening

Preheat the oven to 450. Whisk the cornmeal, flour, salt and baking powder in a large bowl. Combine the buttermilk and milk in a liquid measuring cup. Add the egg and stir together with a fork. Stir in the baking soda.

Pour the milk mixture into the cornmeal mixture and stir with a fork until combined. Melt 1/4 cup shortening in a small bowl, then slowly add to the batter, stirring until just combined.

Melt the remaining 2 tbsp. shortening in a 9-inch cast-iron skillet over medium heat and heat 30 seconds. Pour the batter into the hot skillet and spread evenly (the batter will sizzle). Cook on the stovetop for 1 minute, then bake in the oven until golden brown around the edges, 20 minutes. Let cool slightly before slicing.
