Ingredients
- 1 small shallot, minced
- Butter
- 1/2 cup maple syrup
- 1/2 cup bourbon
- 2 tbsp. ketcup
- 1 tsp Dijon
- 2 tsp adobo sauce (from can of chipotles)
- 2 lbs. split chicken wings
- Flour and vegetable oil, for frying

Saute shallot in butter until tender, 2 minutes. Stir in maple syrup, bourbon, ketchup and Dijon; simmer until thickened, 18-20 minutes. Stir in adobo sauce.

Working in batches, dredge wings in flour, then deep-fry in 375 degree vegetable oil until crisp, about 15 minutes. Drain on paper towels. Toss with the maple-bourbon sauce.
