Fried Maple-Bourbon Wings

Ingredients

  • 1 small shallot, minced
  • Butter
  • 1/2 cup maple syrup
  • 1/2 cup bourbon
  • 2 tbsp. ketcup
  • 1 tsp Dijon
  • 2 tsp adobo sauce (from can of chipotles)
  • 2 lbs. split chicken wings
  • Flour and vegetable oil, for frying

Directions

  1. Saute shallot in butter until tender, 2 minutes. Stir in maple syrup, bourbon, ketchup and Dijon; simmer until thickened, 18-20 minutes. Stir in adobo sauce.

  2. Working in batches, dredge wings in flour, then deep-fry in 375 degree vegetable oil until crisp, about 15 minutes. Drain on paper towels. Toss with the maple-bourbon sauce.
