Bean Pie

Ingredients
- 1 (28 oz.) can cooked navy beans
- 2 cups milk
- 3 Tbsp. butter, melted
- 1/2 cup dark brown sugar
- 1/2 cup white sugar
- 3 eggs, well beaten
- 1 tsp. cinnamon
- 1/4 tsp. ginger
- 1/4 tsp. nutmeg
- 1/4 tsp. black pepper
- 2 tsp. vanilla
- 2 unbaked 9-inch pastry shells.
Directions

Pour beans into blender and combine with milk, melted butter, dark brown and white sugar, well beaten eggs, cinnamon, ginger, nutmeg, black pepper and vanilla.

Pour into two unbaked pie pastry shells and bake in a moderately hot oven (375 degrees) for about 30 minutes, or until a silver knife inserted in the center comes out clean.

Pies will puff up in the oven, but flatten when removed. Like sweet potato and pumpkin pies, which they resemble. these pies are best when served slightly warm.

May be topped with whipped or ice cream.

These freeze well. Cut them in serving pieces before freezing so that they can be served
