Bean and Red Onion Salad

Ingredients

  • 1 cup cooked wax beans, cut into 1-inch pieces
  • 1 cup cooked garbanzo beans
  • 1 cup cooked Great northern white beans
  • 1 cup cooked kidney beans
  • 1 cup cooked green beans, cut into 1-inch pieces
  • 1 cup cooked lima beans
  • Dijon Vinaigrette
  • 2 Tbsp. thinly sliced fresh chives
  • 2 Tbsp. chopped red onion
  • 2 Tbsp. chopped fresh parsley
  • Salt and freshly ground pepper

Directions

  1. If using canned beans, rinse well.

  2. In a large bowl, combine all the beans. Add the vinaigrette, toss well, sprinkle with the chives, red onion and parsley. Season with salt and pepper to taste.
