Ingredients
- 2 tbsp. Champagne vinegar
- 1 tsp Dijon
- 1/2 tsp honey
- 3 tbsp. olive oil
- Kosher salt and black pepper

In a medium bowl, whisk together the vinegar, mustard, and honey. Season with salt and pepper. Quickly whisk in a figure-eight motion while slowly pouring in the olive oil in a steady stream. Continue until the oil is incorporated and the vinaigrette is emulsified. Taste and add more salt and pepper as needed.
