Classic Basil-Parmesan Pesto

Ingredients

  • 2 tbsp. pine nuts
  • 1 cup packed fresh basil leaves
  • 1/4 cup fresh parsley leaves
  • 1 garlic clove, chopped
  • 1/2 lemon, juiced
  • 4 tbsp. olive oil
  • 1 tbsp. grated Parmesan
  • Kosher salt and black pepper

Directions

  1. In a small pan, toast the pine nuts over medium heat until fragrant, shaking the pan frequently, about 5 minutes. Immediately transfer to a blender or food processor. Add the basil, parsley, garlic, lemon juice and 1 tbsp. of the olive oil and blend to combine and break down the garlic and herbs. With the motor running, slowly and steadily drizzle in the remaining 3 tbsp. olive oil until smooth. Transfer to a bowl and stir in the cheese. Taste and add salt and pepper as needed.
