Romesco Sauce

Ingredients

  • 1/4 cup walnuts
  • 1 garlic clove, roughly chopped
  • 4 oz. roasted red peppers
  • 1 tbsp. sherry vinegar
  • 1/4 cup tomato puree
  • 1/2 tsp smoked paprika
  • 2 tbsp. olive oil
  • Kosher salt

Directions

  1. Place the walnuts in a small pan over medium heat. Toast, stirring frequently, until fragrant, about 5 minutes. Remove the walnuts from the pan and roughly chop. Peel the garlic and roughly chop.

  2. In a food processor or blender, combine the walnuts, garlic, roasted red peppers, sherry vinegar, tomato puree, and smoked paprika. Blend to combine. With the motor running, stream in the olive oil until smooth. Taste and add salt as needed.
