Ingredients
- 1 cup apple cider vinegar
- 1/2 tbsp. sugar
- 1 tsp kosher salt
- 1 large red onion, halved and thinly sliced

In a medium bowl or a large jar, combine the vinegar, sugar and salt. Stir vigorously until the sugar and salt have dissolved. Add the onion, being sure to submerge it. Set aside at room temp for about 1 hour, or cover and refrigerate for up to 1 week. The longer they sit, the tangier they’ll get.
