Bean and Tomato Salad

Ingredients

  • 1 (15 1/2 oz.) can garbanzo beans
  • 3 Tbsp. vegetable oil
  • 1 Tbsp. wine vinegar
  • Salt and pepper
  • 1 lb. tomatoes, peeled and sliced
  • 1 medium onion, sliced into thin rings
  • 2 tsp. fresh chopped basil or 1 tsp. dried basil

Directions

  1. Drain beans; rinse under cold water.

  2. Beat oil and vinegar together; season with salt and pepper. Add the beans and mix until well coated, being careful not to break up the beans.

  3. Arrange tomato and onion slices in a shallow dish; sprinkle with basil, salt and pepper. Spoon beans on top. Serve chilled
