Ingredients
- Mini cocktail-style bread, 2 1/2 inches square, toasted
- 1/4 cup chopped roasted red pepper
- 2 tbsp. chopped Kalamata olives
- 1 tbsp. pine nuts
- 1 tbsp. chopped parsley
- 1 tbsp. olive oil
- Salt and pepper
- Garlic cloves, halved
- 2 oz. crumbled goat cheese
Directions

Mix roasted red peppers, olives, pine nuts, parsley and olive oil; season with salt and pepper. Rub bread with a halved garlic clove. Top with the red pepper mixture and goat cheese. Drizzle with olive oil and season with pepper.
