Roasted Pepper-Goat Cheese Cocktail Toast

Ingredients

  • Mini cocktail-style bread, 2 1/2 inches square, toasted
  • 1/4 cup chopped roasted red pepper
  • 2 tbsp. chopped Kalamata olives
  • 1 tbsp. pine nuts
  • 1 tbsp. chopped parsley
  • 1 tbsp. olive oil
  • Salt and pepper
  • Garlic cloves, halved
  • 2 oz. crumbled goat cheese

Directions

  1. Mix roasted red peppers, olives, pine nuts, parsley and olive oil; season with salt and pepper. Rub bread with a halved garlic clove. Top with the red pepper mixture and goat cheese. Drizzle with olive oil and season with pepper.
