Bean Bacon Chowder

Serves 6 people

Ingredients

  • 8 slices bacon, cut up
  • 1 cup chopped onion
  • 2 Tbsp. all-purpose flour
  • 2 cups milk
  • 2 medium potatoes, peeled
  • 1/4 tsp. dried thyme, crushed
  • 1 22 oz. jar baked beans
  • 1/4 cup snipped parsley

Directions

  1. In saucepan, cook bacon and onion until bacon is lightly browned and onion is tender. Blend in flour.

  2. Add milk; cook and stir until bubbly. Dice potatoes; add with thyme, 1 tsp. salt and 1/8 tsp. pepper. Cover; simmer 12 to 15 minutes or until potatoes are done.

  3. Stir in beans; heat through. Top with parsley.
