Chicken-Broccoli Rotini Salad

Ingredients

  • 2 1/2 cups rotini pasta, uncooked
  • 2 cups cooked chicken, cubed
  • 1/2 cup Italian salad dressing
  • 2 cups broccoli, cut into bite-size flowerets
  • 1/2 cup red pepper, chopped
  • Parmesan Dressing:
  • 1 cup grated Parmesan cheese
  • 1/2 cup olive oil
  • 2 tbsp. lemon juice
  • 1/8 tsp dried basil

Directions

  1. Make dressing: In a bowl, whisk all ingredients together.

  2. Cook pasta as directed; drain and rinse with cold water. In a large bowl, mix pasta with chicken and Italian salad dressing. Cover and refrigerate for one hour. Add broccoli, red pepper and Parmesan dressing; toss to mix. Cover and refrigerate until serving time.
