Bean Roast

Ingredients

  • 1 cup roasted shelled peanuts
  • 2 cups seasoned mashed potatoes
  • 2 cups cooked Lima beans, fresh or canned
  • 1/4 cup milk
  • 1 egg
  • 1 tsp. salt
  • 1/8 tsp. paprika
  • 1 tsp. onion-juice

Directions

  1. Grind the peanuts, using the finest blade of the food-chopper.

  2. In a greased baking dish place a layer of potatoes, a layer of beans and a layer of peanuts. Continue making layers until all the ingredients are used.

  3. Blend milk with well-beaten egg and seasoning and pour over the top. Bake in a 350-400 degree oven until brown. Serve with brown sauce or tomato sauce.
