Bean Salad Sandwiches

Ingredients

  • 2 cups cooked, drained pinto beans
  • 3 hard-cooked eggs, chopped
  • 1/2 cup chopped sweet pickle
  • 2 Tbsp. chopped onion
  • 3/4 tsp. salt
  • 1/4 cup mayonnaise
  • 5 (6-inch) pocket bread rounds, halved
  • Leaf lettuce

Directions

  1. Drain beans and mash well. Add eggs, pickle, onion, salt and mayonnaise; mix well, and chill 1 to 2 hours.

  2. Line bread rounds with lettuce; spoon about 2 rounded tablespoons filling mixture into each.
