Ingredients
- 2 cups cooked, drained pinto beans
- 3 hard-cooked eggs, chopped
- 1/2 cup chopped sweet pickle
- 2 Tbsp. chopped onion
- 3/4 tsp. salt
- 1/4 cup mayonnaise
- 5 (6-inch) pocket bread rounds, halved
- Leaf lettuce
Directions

Drain beans and mash well. Add eggs, pickle, onion, salt and mayonnaise; mix well, and chill 1 to 2 hours.

Line bread rounds with lettuce; spoon about 2 rounded tablespoons filling mixture into each.
