Avocado Feta Dip

Ingredients

  • 2 plum tomatoes, chopped
  • 2 avocados, halved, pitted and chopped
  • 1/4 cup red onion, finely chopped
  • 1 garlic clove, minced
  • 1 tbsp fresh parsley, snipped
  • 1 tbsp fresh oregano, snipped
  • 1 tbsp olive oil
  • 1 tbsp white wine vinegar
  • 4 oz. crumbled feta
  • sliced veggies, tortilla chips

Directions

  1. In a bowl, gently stir together tomatoes, avocados, onion and garlic. Mix in herbs, oil and vinegar. Stir in cheese. Cover and chill for 2-6 hours, to allow flavors to blend. Serve with sliced veggies and tortilla chips.
