Ginger Glazed Chicken

Ingredients

  • 1lb skinless and boneless chicken breast
  • salt and pepper to taste
  • 3TBSP butter or maragarine- divided
  • 2TBSP brown sugar
  • 1 pkg frozen baby carrots- partially thawed
  • 1/2 C chicken broth

Directions

  1. Season chicken w/salt and pepper. In large non-stick skillett, melt 1 TBSP butter over medium heat and cook chicken, turning once, 10-12 min, or until golden brown and cooked through. Remove to a serving plater; keep warm.

  2. Over medium heat, melt 2Tbsp butter, brown sugar and ginger, stirring frequently until dissolved. Add carrots and broth, bring to a boil. Reduce heat and simmer, stirring frequently, 5 min, until sauce thickens slightly and carrots are heated through. To serve, sppon sauce and carrots over chicken
