Chipotle Chili Cornbread Bake

Ingredients
- 1 medium bell pepper coarsly chopped
- 6 green onion w/ tops, sliced thin and divided top from bottoms
- 1 lb lean ground beef
- 1 can (16oz) chili beans in sauce, undrained
- 1 C chunky salsa
- 2 TBSP chipotle rub
- 1 pkg corn muffin mix
- 1 container (8oz) sour cream
- 1 egg
- 1/2 C shredded cheddar cheese
- 1 plum tomatoe (shredded and diced)

Preheat oven to muffin mix temp

Brown burger, bell pepers, and onion bottoms in a skillet. Drain. Add beans, salsa, and rub to meat, mix well and simmer until warm.

In seperate bowl, combine muffin mix, sour cream, egg and all but 1 TBSP onion tops (reserve 1 TBSP for garnish). Scoop muffin mix over meat, spreading to edges and cover evenly. Cook in oven according to muffin package directions until center of corn bread springs back when lightly pressed.

Remove from oven and top with cheese. Let stand 5 min.

Garnish with tomato and remaining onion tops.
