Ingredients
- 1 lb. dried beans (marrow, navy, pea or great northern)
- 1/3 cup butter or margarine
- 3 medium potatoes, cooked and mashed, or 1 cup prepared instant
- 1 cup chopped celery
- 1 cup chopped onion
- 2 cloves garlic, minced
- 4 tsp. (about) salt
- 1/2 tsp. pepper
- Chopped parsley
Directions

Wash and drain beans. Put in large heavy kettle with 6 cups water. Bring to boil and boil 2 minutes. Remove from heat, cover and let stand 1 hour.

Add 2 1/2 quarts water, bring to boil, cover and simmer 2 hours, or until beans are onion, garlic and 3 tsp. salt. Cover and simmer, stirring occasionally, about 1 hour.

Add more water if necessary to make a thick soup, then add the pepper and more salt if necessary. Sprinkle with parsley. Serve with French bread.
