Ingredients
- 1/2 cup mayo
- 2 limes, juiced
- 1 tsp ground cumin
- 4 cups cooled cooked converted rice
- 2 cups thawed frozen corn
- 1/2 cup chopped cilantro
- 1/2 cup chopped scallions
- 1/2 cup crumbled Cotija cheese
- Salt
- Chili powder
- Lime wedges
Directions

Whisk mayo with lime juice and cumin in a large bowl. Add rice, corn, cilantro, scallions and cheese; season with salt. Sprinkle with chili powder and serve with lime wedges.
