Ingredients
- 2 cups brown rice
- 1 1/2 cups water
- 1 1/2 cups beer
- 3 tbsp butter
- 1 tsp kosher salt
- 1 1/2 cups shredded cheddar
- 1 tsp Dijon
- Chopped parsley
Directions

Combine rice, water, beer, butter and salt in a saucepan. Bring to a boil, then reduce the heat to low and stir; cover and cook until tender, 45-50 minutes. Let sit, covered, 5 minutes, then stir in cheese and Dijon until the cheese melts. Top with parsley.
