Korean Beef Fried Rice

Ingredients

  • 8 oz. ground beef
  • 1 tsp kosher salt
  • 2 tbsp vegetable oil
  • 2 cup chopped kimchi
  • 4 scallions, chopped
  • 3 cups cooled cooked white rice
  • 1 tsp soy sauce
  • 1 tsp sesame oil
  • Fried eggs

Directions

  1. Season ground beef with salt and brown in vegetable oil in a large skillet over high heat. Add kimchi and scallions; cook until the liquid evaporates. Add rice, soy sauce and sesame oil. Cook, stirring, until warmed through, 3 minutes. Top with fried eggs.
