Apple-walnut pancakes

Ingredients
- 1 c whole wheat flour
- 1 c white flour
- 1 t. salt
- 2 t baking powder
- 1 T brown sugar
- 2 c milk
- 2 eggs, well beaten
- 2 T oil
- 1 c diced apples
- 1/2 c chopped walnuts
Directions

Combine in bowl: wheat flour, white flour, salt, baking powder and brown sugar

Combine in separate bowl: milk, eggs, oil

Add liquids to dry ingredients and stir until just mixed.

Add: apples and walnuts

Bake on moderately hot, lightly greased griddle

Options: 1) use yogurt or juice in place of milk 2) Substitute another whole grain flour or cornmeal for 1/2 c. whole wheat flour 3) Use other fruit, drained and chopped, in place of apples
