Beans and Black Olives

Ingredients

  • 1 3/4 lbs. green beans
  • 6 shallots
  • 1 lemon
  • 2 Tbsp. olive oil
  • Salt
  • Freshly ground white pepper
  • 1 bay leaf
  • 2 sprigs thyme
  • 1/2 cup white wine
  • 1/3 cup black olives
  • 1 Tbsp. finely chopped parsley
  • 1 tsp. finely chopped savory

Directions

  1. Wash and trim the beans. Peel and quarter the shallots. Cut the lemon into wedges.

  2. Heat the oil in a saucepan and saute the shallots over a low heat until translucent. Add the beans and lemon wedges, toss, and saute briefly with other ingredients.

  3. Add the salt, pepper, aby leaf, thyme, and wine.

  4. Cover and cook over a medium heat until the beans are tender, but still firm to the bite.

  5. Halve and pit the olives, add to the beans, and heat briefly. Sprinkle the beans with thw chopped parsley and savory and serve immediately.
