2 Chocolate Pies

Ingredients
- 2 prebaked pie shells at the ready
- FILLING 1st STEP:
- 1 stick butter
- 3 c milk
- 1 tsp vanilla
- FILLING 2nd STEP:
- 1/2 c flour
- 2 1/2 c sugar
- 6 heaping tsp cocoa (for the faint-hearted, just use 4)
- 6 egg yolks (save whites for meringue)
- MERINGUE:
- 6 egg whites at room temperature
- 1/8 tsp cream of tartar
- 6 T sugar
- 1 tsp vanilla

FILLING 1: Combine first three ingredients in large saucepan and start on medium to melt butter. Stir regularly until butter is melted.

FILLING 2: Add next four ingredients, whisking constantly over medium heat. Cook until thick.

Pour into pie shells. Let cool off the stove while preparing meringue. Let some hungry admirers lick the pan. (The pies don’t taste good without this step, so don’t screw it up. If you are alone and have to do it yourself, go ahead and make the sacrifice.)

MERINGUE: Combine last four ingredients and whip until stiff peaks form. Use spatula to put on pies. Cover with chocolate sprinkles if desired. Bake 10-15 minutes at 350 degrees until golden brown. (For taller meringue, use 2 or 3 more egg whites with 1 T sugar per each.)
