Apricot Cranberry Pecan Compote

Ingredients
- 3 Tbsp. butter
- 1 cup dried cranberries
- 1 cup dried apricots, chopped
- 1 cup chopped pecans
- 1 cup chopped onion
- 1 clove garlic, minced
- 1/2 cup brown sugar, packed'
- 1/4 cup apple cider vinegar
- 1/4 cup brandy
- 1/2 tsp. crushed red pepper
- salt and pepper to taste
Directions

Saute onion, cranberries, apricots, and garlic in butter until fragrant. Add water; allow to reduce by half.

Add all remaining ingredients and reduce until thickened. Serve over a soft cheese of choice, such as a brie or triple cream.

Any dried fruit is interchangeable.
