Beans with Pasta

Ingredients

  • 1 lb. dried kidney beans
  • 6 cups water
  • 2 smoked ham hocks (about 1 1/2 lb.)
  • 1 medium onion, chopped (1/2 cup)
  • 4 carrots, chopped
  • 1 tsp. salt\1/4 tsp. pepper
  • 3 Tbsp. tomato paste
  • 2 cups uncooked macaroni shells
  • 1/2 cup chopped parsley

Directions

  1. Pick over and wash beans. Put beans and water in a heavy kettle. Bring to boiling; remove from heat. Let stand 1 hour.

  2. Add ham hocks, onion, salt and pepper to beans. Cover, bring to boiling. Lower heat; simmer 2 hours, or until beans are tender. Add more hot water, if necessary, to prevent mixture from becoming too thick and sticking. Add tomato paste; simmer 10 minutes longer.

  3. Cook pasta, following label directions; drain well. Remove meat from ham hocks; return to beans. Add pasta; mix lightly. Sprinkle with parsley.
