Ingredients
- 1 lb. dried kidney beans
- 6 cups water
- 2 smoked ham hocks (about 1 1/2 lb.)
- 1 medium onion, chopped (1/2 cup)
- 4 carrots, chopped
- 1 tsp. salt\1/4 tsp. pepper
- 3 Tbsp. tomato paste
- 2 cups uncooked macaroni shells
- 1/2 cup chopped parsley

Pick over and wash beans. Put beans and water in a heavy kettle. Bring to boiling; remove from heat. Let stand 1 hour.

Add ham hocks, onion, salt and pepper to beans. Cover, bring to boiling. Lower heat; simmer 2 hours, or until beans are tender. Add more hot water, if necessary, to prevent mixture from becoming too thick and sticking. Add tomato paste; simmer 10 minutes longer.

Cook pasta, following label directions; drain well. Remove meat from ham hocks; return to beans. Add pasta; mix lightly. Sprinkle with parsley.
