Beaten Biscuits

A Southern favorite- the only biscuits that are properly served cold. Recipes and methods of beating varym but the cook who can still turn out good beaten biscuits to pair with ham as sandwiches, or to escort cream soups or chicken salad to the table, may be justly proud.

Ingredients
- 4 cups sifted flour
- 2 tsp. sugar
- 1 tsp. salt
- 1/2 cup lard
- 1 cup milk
Directions

Set out baking sheets.

Sift together flour, sugar and salt into a bowl. Cut in lard until mixture resembles coarse corn meal.

Stir in about 1 cup milk. use enough milk to make a stiff dough. Turn dough out onto a lightly floured surface and knead or beat with a wooden spoon until dough blisters, about 30 minutes.

Roll dough about 1/2 inch thick. Cut out biscuits with a floured 1 1/2 inch cutter. Prick with a folk and place on baking sheets.

Bake at 350 degrees about 30 minutes, or until very delicately browned.
