Beef and Eggplant Bake

Ingredients

  • 1 eggplant, cut into 12 slices
  • 2 lb. ground beef
  • 1/2 cup chopped green pepper
  • 1/4 cup chopped onion
  • 2 Tbsp. flour
  • 2 tsp. salt
  • 2 tsp. pepper
  • 1/2 tsp. oregano
  • 2 8 oz. cans tomato sauce
  • Grated cheese

Directions

  1. Cook eggplant slices in boiling salted water for 5 minutes; drain. Brown met, green pepper and onion; stir in flour, salt, pepper, oregano and tomato sauce. Arrange 6 eggplant slices in greased casserole; cover with half of meat mixture. Repeat layers and top with cheese.

  2. Bake at 300 degrees for 30 minutes.
