Ingredients
- 1 eggplant, cut into 12 slices
- 2 lb. ground beef
- 1/2 cup chopped green pepper
- 1/4 cup chopped onion
- 2 Tbsp. flour
- 2 tsp. salt
- 2 tsp. pepper
- 1/2 tsp. oregano
- 2 8 oz. cans tomato sauce
- Grated cheese
Directions

Cook eggplant slices in boiling salted water for 5 minutes; drain. Brown met, green pepper and onion; stir in flour, salt, pepper, oregano and tomato sauce. Arrange 6 eggplant slices in greased casserole; cover with half of meat mixture. Repeat layers and top with cheese.

Bake at 300 degrees for 30 minutes.
