Ingredients
- 2 large chicken breasts
- Kosher salt, black pepper
- 2 tbsp. olive oil, divided
- Green Bean and Basil Slaw or Red Cabbage and Onion Slaw (see recipes)

Pound chicken breasts between 2 sheets of plastic wrap to 1/4-inch thick; season with salt and pepper.

Heat 1 tbsp. oil in large skillet over high. Carefully place 1 chicken breast in skillet, laying it away from you, and cook until bottom side is golden brown and paillard is nearly cooked through, about 3 minutes. Turn over and cook on the other side until cooked through, about 1 minute. Transfer to a large plate. Repeat with remaining 1 tbsp. oil and paillard.

Serve paillards topped with your choice of slaw.
