Cranberry Bread

Ingredients
- 2 C all-purpose flour
- 2/3 C sugar
- 1 1/2 t baking powder
- 1 t salt
- 1/2 t baking soda
- 1/4 C butter, chilled
- 1 egg, beaten
- 1 or 2 t orange zest
- 3/4 C orange juice
- 1 1/2 C light raisins (opt.)
- 1 1/2 C fresh or frozen cranberries, chopped
Directions

Preheat oven to 350 degrees F. Prepare loaf pan.

Sift flour, sugar, baking powder, salt & baking soda into a large bowl.

Cut in butter until mixture is crumbly.

Add egg, orange zest, & orange juice all at once; stir just until mixture is evenly moist.

Fold in raisins & cranberries.

Spoon into greased 9 × 5 × 3 inch loaf pan. Bake for 1 hour and 10 min., checking at 1 hour for doneness with a toothpick.

Remove from oven and cool for 5 min. in pan. Remove from pan and cool on wire rack.
