Chinese Walnut Chicken

Ingredients

  • 4 chicken breasts
  • 1 Tablespoon corn starch
  • 1/2 teaspoon sugar
  • 5 Tablespoons cooking oil
  • 1 cup ham; diced
  • 1/2 cup chicken broth
  • salt
  • 1/2 teaspoon pepper
  • 2 tablespoons soy sauce
  • 1/2 cup coarsely chopped walnuts

Directions

  1. 1-Bone breasts,discard skin (or use boneless)

  2. 2-Press with hands to make uniform thickness

  3. 3-Cut in 1 1/2 inch squares

  4. 4-Mix cornstarch, 1/2 teaspoon salt, pepper, sugar, 1 tablespoon soy sauce, and 2 tablespoons oil.

  5. 5-Add chicken and stir to coat evenly

  6. 6-Saute walnuts until golden brown in 1 tablespoon oil

  7. 7-Sprinkle with 1/2 teaspoon salt

  8. 8-Heat remaining oil

  9. 9-Add chicken mixture and stir fry for 2 minutes

  10. 10-Add ham and walnuts and stir fry for 5 minutes

  11. 11-Stir in remaining soy sauce and broth, scraping up brown bits from bottom of pan

  12. 12-Cook 1 minute longer
