Japanese Cucumbers and Carrots

Refreshing treat before the meal

Ingredients

  • 1/4 C sugar
  • 1/4 C vinegar
  • 1/2 t salt
  • 1/4 MSG(optional)
  • 1 carrot
  • 1 large cucumber

Directions

  1. Make sauce by mixing the vinegar, sugar, salt, and MSG together until sugar is dissolved. Peel carrot and slice diagonally in 1/4 inch slices. Peel cucumber, remove seeds and slice diagonally. Mix carrots and cucumbers in a bowl. sprinkle with additional salt. Be generous. let stand 20 minutes. Wash off salt and drain. Pour sauce over vegetables. Stand at least 30 minutes. Garnish with chopped green onions.
